Uhhhh you know that time in the day when you have to start dinner. I think to myself every time why did my meal plan. And I go to refrigerator open it up and try to figure out how can I make something quick and easy. I’m not a prepackaged food or frozen food gal.
I had a rotisserie chicken leftover from last night and I knew I had white rice. So I went to the trusty site Pinterest and picked chicken rice cheese casserole.
This was my version
1.5 cup chicken
1 small bag of forzen broccoli (cooked drained)
1cup white rice
1 cup cooked sweet potatoe zoodles
1 cup shredded cheddar cheese
3/4 cup mayonnaise
Topped with crumbled saltines and butter shavings
