I am extremely picky about my fried rice. It’s rare the rice that comes with your number 2 dinner special at China Hut is even remotely edible.

I was thrilled when I came across this recipe that met all of my expectations. Tonight I pulled this gem out we had leftover pork and peas and all the seasonings.

It’s funny because I think this actually came from the dollar tree many many years ago or maybe even some kind of discount store. The price actually said special 2 for 1.00. The title of the book is fabulous oriental recipes by Johna blend. Looking at the copyright its dated 1989.

You must use a short grain sticky rice in my favorites are going to be Calrose or  Nishiki sushi rice. Make sure you rinse it a good three or four times. I also like to use egg well flavored bone broth as the juice for the rice to add depth of flavor.If you can use fresh ginger that’s even better then the powder. And then I like to use a shiracha  sauce instead of Tabasco. I always add peas and finally chopped carrots if I have them available.  Instead of ham there are times that I have used pork ,shrimp or any other meat you find acceptable for your rice.
