So every time we have left over  chicken it might be just a breast or thigh and not enough for a whole meal.

Don’t be fooled this is enough to make a meal for four easily. 

Ingredients

Leftover roasted chicken equivalent to one breast.

2 tablespoons of olive oil,

 one small onion, 

three ribs of celery, 

a handful of chopped carrots.

A little more than 1/3 cup of flour

 4 to 5 cups of bone broth,

One and a half cups of bowtie pasta

 half a cup of cream

Salt and pepper

What to do

Sauté your vegetables until trans parent and soft, add 1/3 cup of your flour and stir. Slowly add on your chicken stock until you get the consistency of gravy. Put in your chicken topped off with the rest of your chicken broth and let simmer for 20 minutes.

If your soup is a little too thick add a little bit more bone broth toss in your bowtie pasta and cook for an additional 20 minutes until soft pour in the cream and stir add salt-and-pepper and serve.
